This pad thai is filled with many flavors and textures and is so much fun to eat! Top it with anything you like. I added sprouts, cabbage, and carrots and a dash of hot sauce.

Ingredients
  • ¼ cup lime juice
  • ¼ cup soy sauce
  • 3 tablespoons water
  • 3 tablespoons tomato paste
  • 3 tablespoons brown sugar
  • 3 tablespoons rice vinegar
  • 14 oz rice noodles
  • 1 medium head broccoli, chopped to bite-sized pieces
  • ⅓ cup sliced shallots
  • 4 cloves of garlic, minced
  • 1 cup sliced scallions
  • a handful of cilantro chopped
  • 3 tablespoons canola oil (divided)
  • 16 oz tofu, cut into cubes
  • 1 large carrot cut into matchsticks (toppings)
  • bean sprouts (toppings)
  • thinly sliced purple cabbage (toppings)
  • chopped peanuts (toppings)
  • lime wedges (toppings)
  • hot sauce (toppings)
Instructions
  1. Prepare the rice noodles according to the package. Do not overcook the noodles and don't let them sit in the hot water. Once they are done, rinse with cold water and set aside.
  2. Combine all sauce ingredients (soy sauce, lime juice, brown sugar, tomato paste, rice vinegar, water) in a jar or a bowl and whisk with a fork to combine. Set aside.
  3. Prepare all your vegetables, garlic, shallots, garlic, cilantro, scallions, and whatever toppings you are using.
  4. Prepare your tofu by adding 1 tablespoon of oil in a deep pan, and toast the tofu, stirring occasionally until golden brown on all sides. This will take around 10 minutes. Remove from heat and transfer to a paper towel lined plate.
  5. In the same pan, add the remaining 2 tablespoons of oil and let the oil heat up.
  6. Add the shallots and cook on high heat for about 2 minutes. Then add the broccoli and cook until bright green, about 5 more minutes.
  7. Now add the garlic, and stir it all together for 1 minute to let the garlic cook.
  8. Fold in a whisked egg at this point, if using.
  9. Add the cooked noodles and ½ of the sauce. Fold in the tofu and mix all together gently.
  10. Turn of the heat and add the cilantro and scallions, mix again, and check if you want more sauce.
  11. Put some of the noodles on a plate and add your toppings and eat immediately!!
